CHEESE CAKE WITH GOLD LEAF

INGREDIENTS

  • 100 g of Digestive cookies
  • 40 g of butter
  • 10 g of white chocolate
  • 800 g of cream cheese
  • 470 g of mascarpone cheese
  • 165 g of sugar
  • 300 g of fresh heavy cream
  • 9 g of gelatin

Preparation

Chop the cookies and add the melted butter with the white chocolate. Mix everything together and place in a 16cm diameter mould. Use a mixer with the flat beater attachment and add the mascarpone and cream cheese. Add the heavy cream, which you’ve brought to a boil, and mix again. Finally add the gelatin that you’ve hydrated with 45gr of water.

Pour into the mould and chill for about 2 hours. Frost with any frosting you’d like, in any colour, and decorate with the 24k gold leaf.
