Not just sweets: savoury ideas with edible gold and silver

Not just sweets: savoury ideas with edible gold and silver

Edible gold, also known as food gold, has ancient origins. We mentioned this just a few articles ago: it was served in the ancient East during sacred rituals and the Egyptians liked to mix it with flour to create shiny loaves of bread. In the contemporary age, it was Gualtiero Marchesi who rediscovered it and used gold leaf on the very traditional risotto alla Milanese, bringing our attention back to the inestimable value of everyday things.

When you think about it, all these uses share precisely the same admirable mission: to elevate a moment of everyday life into something that is unique and precious. That’s why we love edible gold!

There is, however, another ingredient, just as precious and spectacular, yet less used: edible silver
! Have you ever thought of about it?
In this new article we aim to show you the versatility of edible gold and silver, because they’re not just for decorating sweet dishes and desserts.

A truly precious dinner

With September and  autumn just around the corner, we’d like to share with you some seasonal recipes to transform every moment into an actual occasion. Don’t panic: you won’t need Gualtiero Marchesi’s skills to recreate them!
In particular, we want to recommend some savoury recipes for a dinner full of magic: it is often thought (and erroneously we are told) that gold and silver are better suited for desserts and cocktails, but the truth is that their tasteless flavour makes them highly versatile and applicable to any dish… your imagination is the only limit.
To inspire your imagination, we at Gold Chef develop new products and formats every daywhich you can discover here.

As a starter: spinach flan with golden crumbs

The period between the end of September and the beginning of October is the perfect time to welcome spinach to our tables, especially in the warm and enveloping version of a flan.
You can read a detailed description on our website on how to prepare it and, above all, how to garnish it!
Since we are just getting started on dinner, we recommend introducing edible gold with discretion, elegance and delicacy: our Gold Chef gold crumbs are just that touch of sparkle that elevates a simple but tasty flan into a truly magical dish.

First course: tortelli (stuffed pasta) with silver crumbs

As a first course, we suggest these cuttlefish, potatoes and pumpkin cream tortelli, obviously accompanied by silver crumbs. What do you think?
Crumbs are a truly practical format, especially for those using this ingredient for the first time and their application is also quite functional, because the more widespread and random they are, the more spectacular the dish will be! This format also allows you to create many small glittering points, giving the dish a uniform and enveloping effect of brilliance.

Towards the end of the meal: braised cheek and gold

A saying that we love to take literally: finish with style!
That’s why we suggest ending your dinner with braised cheek, potato cream and shallots garnished with precious gold flakes.

Our mission is to make edible gold and silver an increasingly common ingredient, a thought that is in agreement with Gualtiero Marchesi: the preciousness lies in the simplicity of every day; you merely need to know how to enhance it. For us, there is nothing more celebratory than enjoying simple traditional dishes that are rich in history and personal memories: adding that extra touch of sparkle is our way of remembering this every day.

We hope that this dinner has won you over but remember, you’ll find many more recipes on our website. Indeed, we mentioned savoury dishes, but a true dinner cannot end without a dessert. What do you think of these golden pralines?
