  • For the meat:
  • 100 gr beef
  • Chopped capers
  • 1 anchovy fillet
  • Mustard
  • Salt
  • Pepper
  • Extra virgin olive oil
  • For the mango sauce:
  • 1 ripe mango
  • Extra virgin olive oil
  • Salt
  • A pinch of sugar
  • 1 teaspoon apple cider vinegar
  • For the soy sauce:
  • 1 small piece of fresh ginger
  • A bit of chili pepper
  • Olive oil
  • 150 g Soy sauce
  • 35 g water
  • Cornstarch

For the meat:

Chop the meat and season it with all the ingredients according to your taste.

For the mango sauce:

Remove the mango pulp and blend it with the rest of the ingredients until a smooth sauce is obtained.
If needed, add a tablespoon of water.

For the soy sauce:

Fry the olive oil with the chilli pepper and ginger for a few seconds, put in the soy sauce, water and bring to a boil.
In a small container, dilute the starch with a tablespoon of water, add a bit at a time to the boiling soy sauce, up to the right density.

Plate the tartare and the two sauces, sprinkling the edible Gold Chef crumbs over the top.
