FASSONA BEEF TARTARE WITH GOLD CRUMBS

INGREDIENTS

  • 300 g of fassona (or lean beef)
  • 2 egg yolks
  • juice of 1 lemon
  • spring onion sprouts (dragon's eye)
  • salt and pepper to taste
  • 2 tablespoons of extravirgin olive oil
  • mustard
  • 23 kt edible Gold Chef crumbs

Preparation

Hand chop the fassona beef into chunks and put it in a bowl.
Combine the egg yolks, lemon and oil. Salt and pepper.
Add a teaspoon of mustard and a few onion sprouts.

Use the shaker to sprinkle the surface of the tartare with the edible Gold Chef crumbs.
