FASSONA BEEF TARTARE WITH GOLD CRUMBS

- 300 g of fassona (or lean beef)
- 2 egg yolks
- juice of 1 lemon
- spring onion sprouts (dragon's eye)
- salt and pepper to taste
- 2 tablespoons of extravirgin olive oil
- 23 kt edible Gold Chef crumbs
Hand chop the fassona beef into chunks and put it in a bowl.
Combine the egg yolks, lemon and oil. Salt and pepper.
Add a teaspoon of mustard and a few onion sprouts.
Use the shaker to sprinkle the surface of the tartare with the edible Gold Chef crumbs.
